The arrival of cold weather means it’s time for Momma T’s Chorizo Chili. Theresa – wife of CEO Edward, and mother to Abigail – crafted this hardy chili that is the perfect blend of sweet and savory.   • Prep Time: 15 mins

  • Cook Time: 4+ hours

  • Makes: 6 Servings

Ingredients

  • 1 link (6 oz.) El Popular “Original” Chorizo

  • 1 lb. ground meat (beef, pork, or turkey)

  • 2 cans small reds or pink beans, undrained

  • 1 large can tomato juice

  • 1 medium onion, chopped

  • 1/2 clove garlic, minced

  • 2 tbsp chili powder

Directions

  • Brown and drain ground meat.

  • Cook Chorizo separately, Do NOT drain.

  • Chop the onion.

  • Place all meat and all other ingredients into a large CrockPot. Put in meat first to avoid making a mess.

  • Let chili cook for as long as possible, but no less than 4 hours.

  • Top with cheese and pair with corn bread or tortillas.

Chorizo 101

  • Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico.

  • Unlike Spanish Chorizo — Mexican style is soft, raw, uncured, and uncooked.

  • Similar to how Americans view bacon, Chorizo is a versatile ingredient one can use to enhance any dish!

Directions

  • Remove casing from Chorizo links.

  • Place desired amount in a non-stick skillet.

  • Break-up Chorizo while cooking at medium heat.

  • Sauté for 7-8 minutes until the Chorizo is fully cooked or the internal temperature has reached 165 degrees (F).

  • Enjoy on or in any dish.
