‘Nacho’ Normal Nachos. One day, in the 1940’s, Ignacio (“Nacho”) Anaya created the cheesy chip dish we have come to love and crave. Keep this tradition going by using El Popular Chorizo in these Loaded Famoso Nachos for a smooth, spicy, crunchy plate of heaven.

  • Prep Time: 15 mins

  • Cook Time: 25 mins

  • Makes: 8 Servings

Ingredients

  • 1 link (6 oz.) El Popular “Original” Chorizo

  • 1 lb. ground beef or turkey

  • 1 can (16 oz.) refried beans

  • 1 bag of tortilla chips

  • 2 medium tomatos, diced

  • 1 cup quesadilla cheese, grated

  • Crema mexicana or sour cream

  • 1 can nacho jalapeños, sliced

  • 1 ½ cups salsa

  • 1 ½ cups guacamole

  • 1 Onion (sweet) diced

Directions

  • In a large skillet, cook ground meat about half way.

  • Remove Chorizo from casing, add to skillet with the ground meat and cook together until brown for about 4-5 min. Drain oil.

  • Add refried beans to meat, heat and stir together.

  • Place 30 or more tortilla chips on large platter.

  • Spread beans and meat over the chips, then layer with cheese, onions, tomatoes, and jalapeños.

  • Place dollop of crema or sour cream over nachos.

  • Finish off with salsa and/or guacamole.

  • Enjoy!

Chorizo 101

  • Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico.

  • Unlike Spanish Chorizo — Mexican style is soft, raw, uncured, and uncooked.

  • Similar to how Americans view bacon, Chorizo is a versatile ingredient one can use to enhance any dish!

Directions

  • Remove casing from Chorizo links.

  • Place desired amount in a non-stick skillet.

  • Break-up Chorizo while cooking at medium heat.

  • Sauté for 7-8 minutes until the Chorizo is fully cooked or the internal temperature has reached 165 degrees (F).

  • Enjoy on or in any dish.
