Good Things Come in Mini Portions. Sometimes regular cupcakes are just too big for the occasion – like for parties, or when the little ones want something sweet to eat. These Chocolate Chorizo Mini Cupcakes are perfect to arrange in a pretty display on a party platter, or to give to kids as a small treat. Enjoy the balance of sweet and salty in this quick and easy dessert!

Ingredients

  • 1 ½ links (8 oz) El Popular “Original” Chorizo

  • 1 box chocolate cake mix

  • Additional ingredients as directed on cake mix box

  • 1 container of icing (chocolate, vanilla, or salted caramel are recommended)

  • ½ cup mini semi sweet chocolate Chips

Directions

  • Remove casing from Chorizo and place in a medium skillet. Cook Chorizo for 4-5 min until brown. Continuously drain grease as it forms (about 3 times). Set aside ½ of El Popular Chorizo (to use in frosting).

  • Make cake mix according to directions on box. Beat on medium for 3 min.

  • Stir cooked Chorizo into batter.

  • Line mini cupcake pan with liners. Using a mini ice cream scoop, fill liners with one scoop (½ full).

  • Bake according to directions on box (about 9-10 min or less for mini cupcakes). Place on cooling rack to cool completely.

  • After fully cooled to room temperature, ice cupcakes with icing.

  • Garnish the tops with Chorizo and mini chocolate chips.

  • Serve and enjoy!
