Say “Chorizo”! No childhood is complete without macaroni and cheese, but with adulthood comes the urge to try new things and add some flare to the mundane. This Chorizo Mac & Cheese recipe uses El Popular Chorizo to delight your grown-up palette while satisfying your inner child.

Ingredients

  • 1 package (12 oz.) El Popular “Mild” Chorizo

  • 2 tsp flour

  • 2 1/2 cups water

  • 4 cups milk

  • 16 oz. uncooked short pasta such as cavatappi or elbow macaroni

  • 1/2 tsp salt

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1/4 tsp pepper

  • 4 cups shredded cheddar cheese

  • If pressed for time, our Chorizo works great mixed in with any brand of easy stovetop mac and cheese.

Directions

  • Place the chorizo in a large pan, and cook over medium-high heat for about 4-5 minutes. Remove the chorizo from the pan and drain. Add back 2 tsp of the fat into the pan.

  • Add the flour, then whisk until combined, about 30 seconds. Pour in the water and whisk until smooth and just thickened. Add the milk and whisk until combined.

  • Stir in the pasta, salt, garlic powder, onion powder, smoked paprika and pepper, then bring the mixture to a simmer. Cook for 10-12 minutes, stirring occasionally until pasta is done.

  • Turn the heat to low, then stir in the cheddar cheese. Keep stirring until the sauce is smooth. If you need to thin the sauce, add more milk, 1 tablespoon at a time, until desired consistency is reached.

  • Stir in the chorizo, and sprinkle some on top. Top with more cheese for a melty finish.

  • Serve.

  • Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico.

  • Unlike Spanish Chorizo — Mexican style is soft, raw, uncured, and uncooked.

  • Similar to how Americans view bacon, Chorizo is a versatile ingredient one can use to enhance any dish!

Directions

  • Remove casing from Chorizo links.

  • Place desired amount in a non-stick skillet.

  • Break-up Chorizo while cooking at medium heat.

  • Sauté for 7-8 minutes until the Chorizo is fully cooked or the internal temperature has reached 165 degrees (F).

  • Enjoy on or in any dish.
