  • Makes: 1-2 servings

Ingredients

  • 1 jar El Popular Mole Paste (8 oz) or Powder (4 oz)

  • 2-4 cups chicken or vegetable broth

  • 3 cups cauliflower florets

  • ½ white onion, sliced into strips

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Keto tortillas (3 per serving)

  • 2 cups carrots, strips

  • 3 cups spinach

  • Sour cream or Crema (optional)

Directions

  • In large pot, over medium heat, combine El Popular Mole paste or powder and chicken broth. Add broth slowly, while stirring, until you reach your desired consistency. Cook 3-4 min or until mixture is smooth. Remove from heat.

  • Place cauliflower florets and onion into a skillet. Add oil and sauté, adding salt and pepper to taste. Cook until onions are translucent and cauliflower slightly tender.

  • Then, combine Mole sauce with the onions and cauliflower until fully coated.

  • Toast tortillas (either on a pan or over a stove top flame), then fill with spinach, carrots, and a generous heap of Mole cauliflower and onion mixture.

  • Top with sour cream or crema, or any of your favorite taco toppings.
