Makes: 5 Servings
Ingredients
1 lb. El Popular Longaniza, diced into medium-sized chunks
4 oz. can whole tomatoes
4 red bell peppers
1 lb. red potatoes, peeled and diced into medium-sized chunks
1 ea. jalapeño pepper
1 lb. ground beef
Directions
Brown the ground beef, drain well.
Add the diced Longaniza and brown.
Roast the red peppers and cut into medium-sized chunks.
Add the canned tomatoes in with the rest of the ingredients.
Simmer until potatoes are tender.
Serve.
Longaniza 101
Pronounced “Long-ga-nee-sa”.
It’s a sausage similar to Chorizo, but is perfect for grilling since it is firmer and doesn’t crumble when cooking due to being in a natural casing (like a bratwurst).
Unlike Chorizo, which is typically used as an ingredient in a dish, Longaniza can stand on its own as a meal, especially when nestled inside a hot dog bun or tortilla.
Directions
Remove Longaniza from plastic packaging.
Place sausage on grill and cook until the outside edges are slightly crispy and brown.
If using a skillet, place in a skillet with enough water to submerge the sausages halfway. Cook over medium heat until all water evaporates off, and outside of Longaniza is brown and crispy.
