Ingredients

  • 1 package (12 oz) El Popular “Original” Chorizo

  • 1 ½ cups all-purpose flour

  • 1 tsp pumpkin pie spice

  • ½ teaspoon ground cinnamon

  • ½ tsp baking soda

  • 1 tsp cream of tartar

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ½ cup granulated sugar

  • ¼ cup light brown sugar

  • 1 egg yolk

  • 1 tsp pure vanilla extract

  • ¼ cup pumpkin puree

  • 2 tbsp granulated sugar (coating)

  • 1 tsp ground cinnamon (coating)

  • 1 container of icing (vanilla or maple)

  • Maple flavoring (to flavor the vanilla icing, if pre-made maple icing is unavailable)

Directions

  • Make the “Magic Candied Chorizo” recipe (see on the Tasty Dessert page).

  • In a med. saucepan, melt butter over med/low heat. Remove from heat and stir in brown sugar and sugar. Stir for 2-3 min. Let cool for 5-10 min.Stir in vanilla and egg yolk. After mixed, stir in pumpkin puree.

  • Add flour, oats, baking soda, salt, cinnamon, pumpkin pie spice, white chocolate chips. Stir well. Let dough chill for 15 min.

  • Preheat oven to 350 F.

  • Scoop a 2 tbsp sized ball of dough onto a baking sheet lined with a nonstick mat. Bake for 10-13 min until golden brown on edges. Let set up for 5-10 min before transferring to wire rack.

  • Once cooled, ice the bottom of two cookies with frosting. On top of the frosting of one of the cookies, sprinkle a tsp of Chorizo evenly. Take the other frosted cookie and make a sandwich with the frosting and Chorizo in the middle.

  • Continue until all sandwiches are made and enjoy!

Directions

  • Add 2 cups of chicken broth to a large skillet.

  • Heat over a low flame.

  • Slowly add El Popular Mole Paste or Powder until desired thickness is obtained.

  • Keep warm.
