  • Makes: 12 servings

Ingredients

  • 1 package (12 oz.) El Popular “Super Picante” Chorizo
  • 12 jalapeño peppers
  • 8 oz. queso fresco, shredded
  • 8 oz. cream cheese, softened
  • 12 slices of bacon
  • 12 toothpicks

Directions

  • Preheat oven to 325 degrees.
  • Remove casing from Chorizo and place in a medium skillet. Cook for 4-5 min until brown. Drain excess grease. Set aside.
  • Combine the shredded queso fresco and softened cream. Set aside.
  • Cut a slit in each jalapeño, starting near the crown and down to just near the tip. Clean out the veins of the pepper and the seeds with the back of a teaspoon, stuff the peppers half full of the cheese mixture.
  • Sprinkle the Chorizo on top of the cheese mixture.
  • Finally, wrap the peppers with a slice of bacon. Secure the bacon to the pepper with a toothpick.
  • Bake peppers for 8-10 min, rotating each pepper every 2 minutes.
  • Let the peppers cool slightly, remove the toothpicks and serve warm.

Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico. Unlike Spanish Chorizo — Mexican Chorizo is soft, raw, uncured, and uncooked. Similar to how Americans view bacon, Chorizo is a versatile ingredient used to enhance any dish!

  • Cook Time: 10 minutes
  • Makes: 6 servings

Ingredients

  • Remove casing from El Popular Chorizo links.
  • Place desired amount in a non-stick skillet.
  • Break-up El Popular Chorizo while cooking at medium heat.
  • Sauté for 7-8 minutes until the El Popular Chorizo is fully cooked or the internal temperature is 165 degrees (F).
  • Enjoy on or in any dish.
