Ingredients

  • 1 (1 lb) pack, elbow pasta (or any short pasta of your choosing)

  • 1 jar El Popular Mole Paste (8 oz) or Powder (4 oz)

  • 4 ½ cups chicken or vegetable broth

  • ¼ onion, diced

  • Salt, to taste

  • 1 cup oaxaca cheese, shredded

Directions

  • Heat oven to 250° F.

  • Cook pasta according to packaging directions.

  • In a large pot or pan, over medium heat, combine El Popular Mole and chicken or vegetable stock. Add broth slowly, while stirring, until you reach your desired consistency. Add onion and season with salt to taste. Cook 3-4 min or until mixture is smooth.

  • Stir into the pasta, transfer to a medium size baking pan and top with cheese.

  • In the oven, bake for 15 min or until cheese is melted.

  • 1–2 cups chicken broth

Directions

  • In a large skillet or saucepan over low heat, combine El Popular Mole paste or powder with chicken broth.
  • Stir slowly, adding more broth as needed to reach your desired thickness.
  • Sautee for 3–5 minutes, stirring occasionally, until smooth and heated thoroughly.
  • Serve hot over chicken, beef, rice, or vegetables.
