This cupcake has gone bananas! Our moist and flavorful banana cupcake is packed with natural banana goodness and a touch of sweetness, making it a perfect treat for any time of day. Soft, tender, and deliciously comforting, these cupcakes are sure to bring a smile with every bite!

Ingredients

  • 1 ½ package (18 oz) El Popular “Original” Chorizo

  • 1 box of store-bought banana cake mix

  • Additional ingredients as directed on the cake mix box

  • 1 ½ cups chocolate chips (optional)

  • 1 container vanilla icing

  • ¼ cup peanut butter

  • 2 bananas, ripe

  • Caramel drizzle (optional)

  • Chocolate chips and caramel are two great additions that can add another layer of deliciousness.

Directions

  • Preheat oven to temp. Indicated on cake mix box.

  • Remove casing from Chorizo, then place in a medium sized skillet. Cook for 4-5 min until brown. Drain as much oil as possible and pat down with paper towels. Dry as much as possible (for best results, let dry and cool for 1 hr+).

  • Make the banana cake mix as directed on box. Once ready to mix cake ingredients together, incorporate all but 1 cup of cooked and dried Chorizo into the batter (make sure Chorizo has cooled to room temp.). If desired, add in chocolate chips.

  • Pour batter into cupcake tins within a muffin pan. Bake as directed on cake mix box.

  • In medium bowl, beat frosting and peanut butter with spoon until well blended (try crunchy peanut butter for some extra texture).

  • Once cupcakes are done, and sufficiently cooled (room temp.), ice cupcakes with the prepared frosting.

  • Garnish with left over chorizo, banana slices, and caramel drizzle (optional).

Chorizo 101

Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico. Unlike Spanish Chorizo — Mexican Chorizo is soft, raw, uncured, and uncooked. Similar to how Americans view bacon, Chorizo is a versatile ingredient used to enhance any dish!

  • Cook Time: 10 minutes
  • Makes: 6 servings

Ingredients

  • Remove casing from El Popular Chorizo links.
  • Place desired amount in a non-stick skillet.
  • Break-up El Popular Chorizo while cooking at medium heat.
  • Sauté for 7-8 minutes until the El Popular Chorizo is fully cooked or the internal temperature is 165 degrees (F).
  • Enjoy on or in any dish.
