Brunch, munch, munch… Need a good breakfast or brunch recipe to impress your friends? Easy Mole Chilaquiles is the perfect dish to whip up. Chilaquiles are like soft breakfast nachos and can be dressed up or down depending on the occasion with a variety of toppings (we recommend El Popular’s Mole, of course).

  • Prep Time: 25 mins
  • Cook Time: 30 mins
  • Makes: 4 servings

Ingredients

  • 1 jar El Popular Mole Paste 8oz. or Powder 4oz.

  • 4 cups of tortilla chips

  • 2-4 cups chicken broth

  • 4 eggs

  • 1/2 purple or white onion sliced in rounds

  • 1 cup of cream cheese

  • 1 cup of queso fresco

  • 1/2 avocado sliced

  • Small bunch of cilantro (for optional garnish)

Directions

  • To prepare the Mole sauce, see the “Mole 101” box below.

  • Cut onions and crumble the cheese.

  • Cook the eggs to your liking (scrambled or sunny side up is recommended).

  • Spread tortilla chips out to make an even nest on the plate.

  • Pour half of the mole over the chips, and let the sauce soak in.

  • Add onions, crumbled ranchero queso fresco, sour cream, and eggs.

  • Pour remainder of mole.

  • Garnish with avocado slices, cheese, and cilantro leaves.

Chorizo 101

  • Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico.

  • Unlike Spanish Chorizo — Mexican style is soft, raw, uncured, and uncooked.

  • Similar to how Americans view bacon, Chorizo is a versatile ingredient one can use to enhance any dish!

Directions

  • Remove casing from Chorizo links.

  • Place desired amount in a non-stick skillet.

  • Break-up Chorizo while cooking at medium heat.

  • Sauté for 7-8 minutes until the Chorizo is fully cooked or the internal temperature has reached 165 degrees (F).

  • Enjoy on or in any dish.
