Ingredients

  • 4 bolillo rolls
  • 8 oz El Popular Chorizo
  • 2 medium potatoes, diced
  • 1/2 Guajillo Chile sauce
  • Oil for frying
  • Shredded lettuce, crema, and queso fresco for topping

Directions

  • Cook chorizo and potatoes together until browned and tender.
  • Slice rolls and dip quickly in Guajillo Chile sauce.
  • Fill rolls with chorizo-potato mixture.
  • Fry rolls 2–3 min per side until golden.
  • Top with lettuce, crema, and queso fresco. Serve hot.

Ingredients

  • Remove casing from El Popular Chorizo links.
  • Place desired amount in a non-stick skillet.
  • Break-up El Popular Chorizo while cooking at medium heat.
  • Sauté for 7-8 minutes until the El Popular Chorizo is fully cooked or the internal temperature is 165 degrees (F).
  • Enjoy on or in any dish.
