  • Cook Time: 10 mins
  • Makes: 8 servings

Ingredients

  • 1 pkg. (12 oz.) El Popular Chorizo
  • ½ pineapple chunks
  • 1 yellow bell pepper diced
  • 3 yukon gold potatoes, diced into ¼ inch squares
  • 1 cup cotija cheese
  • Salt to taste
  • 1 bag of tortilla chips
  • 1 medium onion finely chopped
  • 1 medium tomato diced

Directions

  • Remove casing from chorizo and place in large skillet. Cook 8-10 minutes over medium heat.
  • Meanwhile, cook beans in a medium pan over medium heat.
  • Break up chorizo while cooking. Drain.
  • Add chopped onions, peppers and sauté for 2 minutes.
  • Add pineapple and continue to sauté over low flame.
  • Salt and season to taste.
  • Serve in a bowl and enjoy!

Unlike Spanish Chorizo — Mexican Chorizo is soft, raw, uncured, and uncooked. Similar to how Americans view bacon, Chorizo is a versatile ingredient used to enhance any dish!

  • Cook Time: 10 minutes
  • Makes: 6 servings

Ingredients

  • Remove casing from El Popular Chorizo links.
  • Place desired amount in a non-stick skillet.
  • Break-up El Popular Chorizo while cooking at medium heat.
  • Sauté for 7-8 minutes until the El Popular Chorizo is fully cooked or the internal temperature is 165 degrees (F).
  • Enjoy on or in any dish.
